Creating memories in cosmopolitan Madrid
Cities have historically been places where cultures have exchanged ideas. Today, cuisine directly reflects this urban cosmopolitanism, where tradition, memory and globalisation coexist. This presentation considers Madrid as a contemporary city-state where no cuisine remains isolated, and where Éter is a space for gastronomic creativity, with a window open to the world.
Through the concepts of sapid memory, the circular nature of the menu and creative freedom, it explores how cuisine can create memories, generate emotion and become a universal language in the modern metropolis.
