The physiology of Carioca taste

In their talk, Claude and Jessica will focus on the flavours, products and colours of Rio de Janeiro in Brazil.
They will demonstrate how French techniques can enhance Brazilian ingredients, with a particular focus on those found in Rio de Janeiro. The talk will cover ingredients such as cassava, palm hearts, urucum and jiló, and will emphasise sustainable practices.
The pair will also discuss ways to involve customers in the day-to-day running of the restaurant.
