Circular nixtamal
Lime as the origin: nixtamalisation technique and contemporary applications.
In this presentation, Santiago M. Moctezuma will share his research and practice on nixtamalisation, addressing the topic from technical and cultural perspectives.
The talk will present the traditional nixtamalisation method using oyster lime and demonstrate its application to other grains. It will also show how lime can be used not only as a nixtamalisation agent, but also as an active ingredient in other culinary methods and processes. Santiago's aim is to promote an understanding of corn as not only an ingredient, but also the origin, living memory and future of Mexican gastronomy.
