In a world of gastronomy obsessed with novelty, anachronistic cuisine arrives late on purpose, offering familiar dishes, long cooking times, and techniques that seem outdated today. It is a cuisine that does not seek to surprise, but rather to return to basics.
Anachronism does not reject the future. Rather, it embraces it when it serves to preserve the integrity of the product and the process, using new tools not to alter what we eat, but to ensure that we do not forget it.
In this presentation, Cristian Palacio will be joined by Borja Insa (Moonlight Experimental Bar), Félix Artigas (sommelier at Gente Rara), and Nacho Álvarez (lecturer at the University of Veterinary Medicine in Zaragoza).
